As winter approaches, the desire for warm, comforting, and healthy food grows. One such delightful dish perfect for the season is Chaulai ka Saag, also known as Amaranth Greens. This nutritious green leafy vegetable is not only delicious but also packed with health benefits, including being a good source of vitamin C. If you're looking to add this wholesome dish to your winter menu, here is a simple recipe to follow.

To begin, you will need Chaulai saag, onions, tomatoes, green chilies, garlic, cumin seeds, coriander powder, turmeric powder, red chili powder, oil, and salt to taste.

First, prepare the Chaulai saag by cleaning it thoroughly. Pluck the leaves from the stems, wash them well in clean water two to three times, and then finely chop them. At the same time, finely chop the onions, tomatoes, garlic, and green chilies.

Next, heat a pan or a kadhai over medium flame and add some oil. Once the oil is hot, add the cumin seeds and let them crackle. Then, add the finely chopped garlic, onions, and green chilies. Sauté these ingredients until the onions turn a light golden brown.

After the onions are cooked, add the chopped tomatoes to the pan, along with turmeric powder, coriander powder, and red chili powder. Mix all the spices well and cook until the tomatoes become soft and the oil starts to separate from the masala.

Now, add the finely chopped Chaulai saag to the pan. Add salt according to your taste. Stir everything together to combine the saag with the masala. Cover the pan with a lid and let the saag cook on low heat for about 10 to 15 minutes. Stir it occasionally to prevent it from sticking to the bottom of the pan. The saag will release its own water, so there is no need to add any extra.

Once the saag is tender and cooked through, turn off the heat. Your delicious and healthy Chaulai ka Saag is now ready to be served hot with roti or rice.
