Recipe: Enjoy cold saffron kulfi in summer, make it like this at home!

Component:

1 liter full fat milk

1/2 cup sugar

1/4 tsp cardamom powder

1/4 tsp saffron threads

1 tbsp chopped nuts (almonds, pistachios)

Ice cream molds or small disposable cups

Instruction:

  • Heat milk in a heavy bottomed vessel and let it boil.
  • Lower the flame and boil the milk while stirring occasionally till the milk reduces to half.
  • Add sugar, cardamom powder and saffron to the milk and mix well.
  • Simmer the mixture on low heat for 5-10 minutes till it becomes thick and creamy.
  • Take the pan off the heat and let the mixture cool down.
  • Add chopped nuts to the mixture and mix well.
  • Pour the mixture into kulfi molds or small disposable cups.
  • Cover each mold or cup with aluminum foil and insert an ice cream stick in the center.
  • Refrigerate the kulfi for at least 6 hours or overnight.
  • To serve, take out the Kulfi from the molds or bowl and serve garnished with chopped nuts.
