New Delhi – Tired of the usual barfi you get at sweet shops? Make this unique and delicious Pineapple Barfi which can be easily prepared at home. Pineapple Barfi is as beautiful as it looks. All you need are a few ingredients like pineapple, coconut, custard powder, sugar and ghee to make this delicious barfi. The texture of Pineapple Barfi is somewhat similar to that of Karachi Halwa. Ingredients of Pineapple Barfi

1 cup pineapple cut into pieces
1/2 cup shredded coconut
2 tbsp ghee

1 cup sugar
1/2 cup custard powder

How to make Pineapple Barfi

1 Mix sugar and water

In a pan add 1 cup of sugar and one and a half cups of water. When the sugar melts completely and the mixture becomes slightly hot, switch off the gas. Remember, you don’t need to make sugar syrup here, just dissolve sugar in water.

2 grind pineapple and coconut

Put shredded coconut and pineapple pieces in a blender. Now mix well to make a mixture. Once done, strain the mixture to get pineapple and coconut juice. Discard the strained pulp.

3 mix custard powder

Now mix well with custard powder and pineapple-coconut juice. When mixed well, add it to the hot sugar mixture.

4 cook the mixture

Keep stirring the mixture till it thickens. Add 2 tbsp ghee and mix well again. Once the mixture becomes thick, leave it on the side of the pan.

5 let it set

Cover it with butter paper or take it out in a mold greased with ghee. Let it set for 1 hour and then keep it in the fridge for 1 hour.

Cut into 6 burfis and serve

Cut into square shaped barfi and enjoy.
