Material:
Ingredients of Kachori

2 cups all purpose flour, salt and ajwain as per taste, 1/4 cup water, ghee/oil as required

stuffing ingredients
1/2 cup moong dal soaked for half an hour, 1.15 tbsp oil, 1 tsp fennel, 1 tsp cumin, 1 tsp dry coriander coarsely ground, 1/4 tsp asafoetida, 3 tsp gram flour, white and black Salt as required Taste, 1/4 tsp turmeric powder, 1 tsp red chili powder, 1 tsp dried mango powder, 1 tsp roasted cumin powder, 1/2 tsp garam masala, 1/4 tsp kasoori methi, 1 tsp coriander powder, 1 tsp sugar powder

Method :
First of all mix carom seeds, salt and ghee in the flour and knead the dough and keep it covered for 15-20 minutes.

After this, grind the lentils coarsely. Now heat oil in a pan and fry coarsely ground asafoetida, coriander, fennel, cumin and gram flour.

After frying well, mix white-black salt, turmeric, coriander powder, red chili powder, dried mango powder, cumin powder, garam masala and ground lentils and fry for 5 minutes.

Finally add kasoori methi and sugar. When the mixture cools down, make small laddus out of it.

After this knead the dough lightly again and make small balls. Roll each ball lightly and spread it with hands by placing a laddu in it. Similarly, roll all the kachoris and fry them in hot oil on medium flame.
