Chole Bhatore
Material
-200 grams Kabuli Chana
-4 medium sized onions
– 3 medium sized tomatoes
-2 green chilies
– 10 cloves of garlic
– 1 inch piece of ginger
– 2 tsp chopped coriander
-1 tsp red chili
-1/2 tsp turmeric powder
-1 tsp coriander powder
-1 tsp garam masala
-1 tsp dried mango powder
-2 tsp oil
-1 tsp ghee
– a pinch of asafoetida
Salt as per taste
Method
Soak gram in water for 6-7 hours. Then boil it in a pressure cooker with a glass of water and a pinch of salt. After this, heat oil or ghee in a pan. Add a pinch of asafoetida and add onion paste and fry for five minutes. Then add ginger, chili, garlic paste and fry for two minutes, add tomato puree. Fry it again for five minutes. When the oil starts separating, add garam masala, dry mango powder, red chili, turmeric, coriander powder one by one. Stir for a while and add boiled chickpeas (if making gravy, add two spoons of water). After stirring for five minutes, take it off the gas. Put chopped coriander on top and cover it. Enjoy eating with this hot Punjabi Chana Bhature.
