Hariyali Matki Khichdi Recipe: Enjoy this green tasty recipe in Sawan, note the method

New Delhi – In today’s recipe, we have brought you the recipe of Hariyali Matki Khichdi. It is a perfect food for sugar patients and this khichdi recipe is very easy and can be prepared in just 15-20 minutes. All you need is soaked moth bean sprouts or matki and rice along with mint leaves, spinach, and some spices to cook this dish.
Ingredients for Hariyali Matki Khichdi

1 cup matki sprouts
1 onion
1/2 cup pureed spinach
1 tsp garam masala powder
1 tsp cumin
4 tsp ghee
5 cups water

1 cup rice
1 cup spinach
1/2 cup mint leaves
1 tsp black pepper
1 tsp asafoetida
8 cloves garlic
salt as required

How to make Hariyali Matki Khichdi?

1. Take a big bowl and wash the matki 2-3 times. Once done, soak them overnight and sieve well after soaking. After this wash the rice 2-3 times and soak for 20-30 minutes before cooking.

Temper 2 cumin and asafetida in ghee

Now take a pan and keep it on medium flame. Add desi ghee to it and let it melt. When the ghee melts, add cumin seeds along with asafetida. Let them fry for a few seconds.

Fry 3 onions and garlic

Add chopped onion and garlic to the pan. Fry them on medium flame while stirring well.

4 When the raw smell of onion goes away, add rice and mix well. Then pour water in the pan and stir it once again. Cook the khichdi on medium to high flame only. Now add black pepper powder and garam masala to the khichdi and mix. Cook for 2-3 minutes.

5 khichdi cooked with spinach and spring onions

Add spinach puree to the khichdi along with chopped spinach, green chillies and spring onions. Stir well and cook for 2-3 minutes more. Add chopped mint leaves to the pan and mix once again.
6 Temper the garlic in ghee and add to the khichdi and enjoy

For the last step, keep the tadka pan on medium flame and melt the ghee in it. Add chopped garlic to it and temper for a few seconds and pour over the cooked khichdi. Khichdi is ready, serve it hot with roasted papad, pickle.
